Vegetable Egg Skillet

Most of my clients really love being able to add eggs back into their program. Eggs are an ingredient that they really miss. The great thing is, most of you will be able to handle eggs in your meal plan, but be sure to continue journaling your health issues as you do.

This is one of my favorite breakfast recipes. David likes to make this at least once a week.  The great thing is that you can use whatever veggies you have on hand. There are no right or wrong veggies to add to this scramble. Whatever you like and have in your kitchen is perfect for this meal.

Ingredients

2 TBSP avocado oil

1/4 onion

1 clove garlic

3-4 mushrooms, sliced

Veggies like broccoli, cauliflower, asparagus, brussels sprouts, etc.  (I usually use some of my roasted veggies from earlier in the week.)

2 eggs, pasture-raised

Salt & pepper to taste

Directions

I like to start with onions and garlic as the base. After those are fragrant and soft, add your other veggies. Once they are tender and warm you can add your eggs. I like to scramble them in a separate bowl first. Then add them to the veggies and stir to make sure they don’t burn until they are cooked to the level that you like. Salt & pepper to taste and serve.
