This recipe was inspired by Terry Wahls in her cookbook. If you don’t know who she is you need to google her. Her story is amazing how she put her MS in remission with food and supplements. I love to follow doctors like her that have these truly amazing stories. I’ve changed a few things in the recipe, like I always do, so that it works into our program and it has the things that were important for our health. You should do the same. You can take this recipe as a basic and add to it what you need.
Ingredients
1 lb ground turkey
1/2 cup fresh oregano (2 TBSP dried)
1/2 cup fresh parsley
Salt and pepper to taste
1/4 cup avocado oil
3 TBSP minced garlic
1 large sweet potato, grated
1 half red cabbage, chopped
4 cups kale, chopped
Directions
In a food processor pulse together oregano, parsley, salt, and pepper until minced. Set aside half herb mixture. Add turkey to the other half of the minced herbs in the food processor. Pulse until they are well mixed. Add additional salt and pepper if you like. Form turkey into small meatballs.
Heat avocado oil in a skillet. Cook garlic and minced herbs until fragrant. Add the meatballs and cook 10-15 minutes until done. While meat is cooking, divide kale, red cabbage, and sweet potato on two plates. When meatballs are done place on top of the greens and serve.
