Spicy Thai Salad Recipe

INGREDIENTS 

1 head of kale  

4 cups thinly-sliced lettuce 

1 cup shredded carrots 

1 cup shredded beets 

½ bunch cilantro leaves 

2 scallions, thinly sliced 

Juice of half lemon

1/4 teaspoon salt

 

PREPARATION

Cut kale into ribbon strips and massage with ¼ teaspoon salt and juice of half a lemon until soft. Add to other ingredients and mix well. Top with Spicy Thai Dressing or Primal Kitchens Sesame Ginger Dressing. Serves 4.
