INGREDIENTS
6 oz shrimp, peeled and deveined
1 TBSP avocado oil
1 clove garlic, minced
½ lemon, juiced
1/3 head green cabbage, shredded
¼ head purple cabbage, shredded
4 limes, juiced
2 oranges, peeled and sliced in small pieces
2 TBSP cilantro, chopped
Salt & pepper to taste
Avocado, diced, or guacamole
2 limes for garnish
6 grain-free tortillas (I have bought Sieté brand when I haven’t been able to make my own)
DIRECTIONS
Place cabbage, lime juice, oranges, cilantro, salt, and pepper in a bowl and mix. Leave in the refrigerator for at least 30 min and up to several hours.
Sauté shrimp in avocado oil, garlic, and lemon.
Warm up tortillas.
Add shrimp, cabbage mixture, avocado, and limes to a tortilla. Enjoy.
