This is a favorite salad of ours when we’ve made Seared Ahi Tuna (you can use yellow fin too) the night before. You can make it with any kinds of greens you want but we like to do it with cabbage and kale. I think it adds a unique flavor to the tuna especially if you use the Spicy Thai salad dressing on it. The picture is just of the kale and cabbage salad. I forgot to add the tuna on top and get a picture of that too.
Ingredients
2 – 5 oz seared tuna fillets, sliced
1 bunch kale, de-stemmed
1/4 head red cabbage, shredded
1/4 head green cabbage, shredded
2 tomatoes, seeded and chopped
1/4 yellow pepper, seeded and chopped
1/4 red pepper, seeded and chopped
1/4 cup red onion, thinly julienned (optional)
Directions
In a large bowl mix kale, cabbage, red onion, red and yellow pepper, with spicy Thai dressing. Once coated with the amount of dressing you want then divide between two plates. Top with a tomato and a seared tuna fillet on each place. Serve.
