You’ve probably guessed by now that salmon is one of my favorite fish to eat and also recommend to my clients. A good wild-caught salmon has lots of great vitamins and minerals that we all need, plus good fish oils that are so good for the body and the brain. For this recipe I simply take leftover baked salmon and put it on some salad greens with some of my favorite veggies, add a dressing, and you have a great main course salad.
Ingredients
4 cups mixed greens
1/2 avocado, sliced
1/4 cup raspberries
1/4 cup blueberries
Microgreens for garnish
Favorite salad dressing
Directions
Put mixed greens on a plate. Add berries and avocado. Lay salmon fillet on top and garnish with micro-greens. Serve with favorite dressing. I really like raspberry vinaigrette with this one.
