I’ve been making these for years. A big difference in our meal plans now is we only have white potatoes once a week so we may not make these as often but they are still a favorite when I do.
3 lbs organic red potatoes, cleaned and cut into quarters
1/3 cup avocado oil
1 TBSP garlic powder
1 TBSP onion powder
¼ tsp cayenne pepper (optional)
2 tsp paprika
½ cup fresh parsley, minced (if using dry you only need 3 TBSP)
Preheat over to 450°. Line baking sheet with foil and set aside.
In large bowl mix avocado oil, garlic powder, onion powder, cayenne pepper, paprika, and half the parsley. Once combined add potatoes and coat with mixture.
Bake for 20-30 minutes turning occasionally so they don’t get burned, but you want the potatoes to have brown roasted edges and when a fork goes in they are cooked. Garnish with the rest of the fresh parsley and serve.
