We love roasted beets. We serve them with lots of different meals or add them to a salad and make them into delicious roasted beet salad that we can use as a meal. You’ll get lots of great nutrients from root vegetables, so add a few more into your meal plan whenever you can.
1/4 cup avocado oil
4 large beets, peeled and sliced into wedges
1 TBSP paprika
1 TBSP cumin
1 Tsp salt
1/2 tsp pepper
Preheat oven to 425°. Cover a baking sheet with foil.
Take a bowl and add avocado oil and all seasonings. Mix up and add sliced beets to the bowl and cover completely. Lay beets out on baking sheet. Bake for 15 minutes and then flip beets wedges over and cook another 15 minutes. Check to see if beets are tender. If not, cook another 10-15 minutes.
