I think I’ve mentioned before how much my family likes roasted beets. If I’m making them for a dinner side dish I always make extra so that the next day I can make this salad. We love it and I hope you do too.
2 large organic beets cut in wedges and roasted
4 cups organic mixed greens
1 organic carrot, grated
1 organic pear, cored and sliced
1/2 cup walnuts, chopped in large pieces
Place mixed greens on 2 plates. Add roasted beets, carrots, and sliced pear. Top with walnuts. Drizzle with your favorite dressing. We like the one we put on the Avocado Pomegranate Salad.
