Raspberry Vinaigrette Recipe

INGREDIENTS

1 cup raspberries, fresh or frozen

1/3 cup olive oil

3 TBSP red wine vinegar

1 small shallot, diced (about 2 tsp)

1 tsp Dijon mustard

1/4 tsp salt

pepper, to taste

DIRECTIONS

Put all ingredients into a blender and blend. Can store up to a week in the refrigerator.
