Peach Porridge

As a kid I used to sing a song that said “peach porridge hot” in it. I had never tasted a peach porridge until we went on this More Than Healthy journey and decided we needed to get healthy. Now I love my porridge, especially on cold winter mornings. Sometimes you just don’t feel like having a cold smoothie and this is a great substitute. We change between the ground flax seeds and the chia seeds to mix it up.

Ingredients

1/4 cup ground flax or chia seeds

1 cup coconut milk (in level 2 you can use almond milk if you can tolerate it)

1 ripe peach, pitted and coarsely chopped

1/4 tsp pure vanilla extract

1 TBSP unsweetened coconut flakes

Directions

Heat the coconut milk in a saucepan on medium-high heat until it’s steaming. Add flaxseeds or chia seeds, peaches, and vanilla. Stir until well mixed. Pour into a cereal bowl and top with coconut flakes and serve.
