Pancakes with Blueberries

Sometimes you just have to have pancakes for breakfast or a brunch. This recipe is a simple one but I also want to admit that sometimes I use a prepackaged mix. Birch Blenders Paleo mix is good once you’ve added eggs back into your meal plan. I just follow the directions on the package and pour them onto a griddle, add the blueberries, and then flip them when they’re done. So you can either make them from scratch following the directions below or use this mix.

Ingredients

4 pasteurized eggs

1/2 cup Cassava Flour

1/8 cup extra virgin coconut oil

1 TBSP local honey or Swerve

1/2 tsp baking soda

1/4 tsp salt

1 cup blueberries, washed and drained

Directions

Heat griddle to 350°.

Place eggs, cassava flour, coconut oil, honey or Swerve, baking soda, and salt in a high-powered blender. Mix on high for 45 seconds or until well blended and slightly foamy.

Pour 1/4 cup batter onto a hot griddle to form 6 pancakes. Sprinkle blueberries onto each pancake. Once cooked on one side flip and cook onto the other side.

Serve with pure maple syrup.
