Meatball Soup Recipe: How to Make Meatball Soup

We love this soup. It has such great flavors and is simple to make. I make it on the stovetop but you could make it in a crockpot and just cook it slowly for 6 hours.

Ingredients

1 lb ground grass-fed beef

1 onion, diced

2 TBSP minced garlic

2 TBSP fresh rosemary, minced (can use 2 tsp dried)

1 TBSP fresh savory, minced (can use 1 tsp dried)

2 TBSP fresh parsley, minced (can use 2 tsp dried)

4 cups beef or chicken bone broth

2 cups green beans, trimmed and cut into bite size pieces

1 cup mushrooms, sliced

½ cups carrots, sliced

2 cups spinach

Directions

Add ground beef, half of onion, garlic, rosemary, savory, and parsley to a bowl and mix well to incorporate everything. Make meatballs.

In soup pot (or crockpot) add bone broth, green beans, mushrooms, carrots, and meatballs. If on the stovetop bring to boil and turn down to simmer for 40 minutes or until carrots are tender. If using a crockpot just cook on low for at least 6 hours.

Add spinach and serve.
