Mashed Turnip Recipes

Turnips are a vegetable most of my clients need to acquire a taste for. They aren’t used to them so this recipe can help incorporate them into their diet and make it easier for them to eat. And, if you’ve made it to level 2 or 3, you can top it with Chicken Alfredo or Beef Stroganoff.

Ingredients

6 turnips, peeled and cut in quarters

1/2 cup almond or coconut milk

2 TBSP ghee (if you’re in level 4 you can add butter if you prefer)

Salt and pepper to taste

Directions

Add turnips to cold water. Turn up the stovetop to high and boil turnips until they are tender (30-35 min). Pour off water. Transfer to a bowl and add the almond milk, ghee, salt, and pepper. Use a potato masher if you like it chunky. If you want it more smooth then use a mixer or an emulsifier. Serve alone or top with Thai Coconut Shrimp.
