This is great way to incorporate kale into your meals. We love the unique flavor that this dressing adds to kale. This recipe is from Andrea Nakayama.
4 TBSP olive oil
3 TBSP fresh squeezed orange juice
2 tsp lemon juice
2 TBSP light miso
1 clove garlic, crushed
1-2 tsp yacon or coconut nectar
1 1/4 tsp onion powder
1/4 tsp Dijon mustard or pinch of mustard powder
1/8 tsp iodized sea salt
Pinch cayenne pepper (optional)
1 bunch kale, de-stemmed
1/4 head cabbage, shredded
2 tomatoes, seeded and chopped
1/4 cup red onion, thinly julienned (optional)
In a medium bowl, combine oil, juices, miso, garlic, yacon or coconut nectar, onion powder, mustard, salt, and cayenne pepper. Whisk to a smooth consistency and set aside.
Chiffonade the kale into thin strips and massage with a small amount of salt to soften the kale. In a large bowl, toss the kale with the dressing and massage for three minutes. Add cabbage, tomatoes, and red onion. Serve.
