Herb Vinaigrette

This is one of our go-to salad dressings. It’s simple and pairs well with most salads that have a lot of greens and veggies. My favorite one is to put in on the superfood salad. I’ve been making this for years so I can’t even say where I learned to make it. It’s evolved over time and it’s really quite flexible, so if you have different herbs you want to throw in you can. I’ve made it with parsley, oregano, and basil, and it’s quite good.


1/3 cup extra virgin olive oil

1/3 cup red wine vinegar

2 tsp dijon mustard

1 clove garlic, crushed

1 tsp minced fresh rosemary

1 tsp salt

1/2 tsp pepper


Add all ingredients to a blender and blend until emulsified or shake in a mason jar with a lid. Use right away or store in the fridge in the jar.
