I like to make this recipe on the BBQ. If that’s not an option you can bake it in the oven.
1 lb asparagus. trimmed
1/4 cup avocado oil (can use olive oil)
4 TBSP minced garlic
Zest of 1 lemon
Juice of 1 lemon
½ tsp of sea salt
½ tsp of pepper
Preheat outside grill or oven to 425°. Cut large sheet of foil (if doing this in the oven then use the foil to line cookie sheet).
Add oil, garlic, zest of lemons, lemon juice, salt, and pepper to bowl. Whisk together.
Trim asparagus spears. Lay asparagus onto foil. Drizzle oil mixture over the asparagus. Toss the asparagus around until completely covered. If grilling then fold the sides of the foil over the asparagus and completely seal.
Put on grill for 5 min and then turn. Cook another 5 min and turn. Cook another 5 min and check to see if asparagus is done. If cooking in the oven after 5 minutes turn the asparagus over and cook another 5 min. Turn again and remove from oven when asparagus is done to your liking.
