This cereal is loaded with lots of great ingredients that usually I put in my smoothie recipes. But sometimes you just want some hot cereal and when I do, this is the recipe I turn to. This recipe is from Andrea Nakayama.
Ingredients
1 TBSP ground flax seeds
1 TBSP pumpkin seeds
2 TBSP shredded unsweetened coconut
2 tsp chia seeds
1/4 tsp cinnamon
pinch of iodized sea salt
1 vanilla bean, seeded, or dash of pure vanilla extract
hot water
7 drops liquid vanilla cream or plain stevia or 1/2 tsp of sweetener of choice
4-5 strawberries or other seasonal fresh fruit
1 TBSP goji berries
Coconut milk
Directions
Grind flax seeds into fine meal and set aside (I like to grind mine up a cup at a time and put them in an airtight glass container in my refrigerator. That way they’re ready when I get ready to make this recipe).
Using a blender like the Magic Bullet, a Vitamix dry blade, or a food processor, process pumpkin seeds, coconut, chia, cinnamon, sea salt, and vanilla until finely ground.
Add ingredients to a serving bowl and add flax seeds. Add hot water to cover. Add stevia. Mix well until you get the consistency you like (add more hot water if you need to).
Top with fresh fruit, goji berries, and drizzle with coconut milk.
