This is another porridge we like to have on a cold fall or winter day. I make this one with flax but it’s great with chia seed too. You can make it on the stovetop, or you can heat the coconut milk up and then blend everything in a high-speed blender. That’s how Terry Whals likes to do her porridge where I’m more of a fan of cooking it on the stovetop.
1/4 cup freshly ground flax seeds
1 cup coconut milk (you can use almond milk if on level 2)
1 TBSP coconut or MCT oil
2 TBSP unsweetened coconut flakes or chips
1/2 tsp cinnamon
1/4 cup raisins
Heat the coconut milk in a saucepan on medium-high heat until it’s steaming. Add flaxseeds or chia seeds, coconut oil, coconut flakes, and cinnamon. Stir in raisins until well mixed. Pour into a cereal bowl and serve.
