Crepes with Berries

I make these crepes when we want to have a fun brunch. They are designed for Level 2 when you’ve reintroduced eggs, but if you get to level 4 you can add a dollop of heavy whipping cream as an additional treat. There is a pre-packaged mix that I have used for these that is pretty good. It’s Birch Blenders Paleo mix. I add extra water to the recipe so that it forms crepes instead of pancakes. Then fill them with fruit and roll them into a tube.

Ingredients

4 pastured eggs

1/2 cup Cassava Flour

1/8 cup extra virgin coconut oil

1 TBSP local honey or Swerve

1/2 tsp baking soda

1/4 tsp salt

1/4 cup almond or coconut milk

1 cup blueberries, strawberries, or raspberries, washed and drained

Directions

Heat griddle to 350°.

Place eggs, cassava flour, coconut oil, honey or Swerve, baking soda, salt, and almond milk in a high-powered blender. Mix on high for 45 seconds or until well blended and slightly foamy.

Pour 1/4 cup batter onto a hot griddle to form 2 crepes. I like to spread them out so they are really thin. Flip them over when one side is golden brown. Sprinkle berries onto each crepe and roll into a tube and serve.
