Cream of Broccoli Soup

I’ve been making this recipe for years. We love Cream of Broccoli Soup. I used to make it with heavy cream but to fit into level 1 I changed the recipe to coconut milk. We can’t even tell the difference in the recipe and it’s so much better for my hubby. He doesn’t do well with any dairy.


1 TBSP avocado oil

1 medium onion, chopped

2 garlic cloves, minced

1/2 tsp sea salt

Large head of broccoli (at least 4 cups), cut into florets

3-4 cups chicken bone broth

Salt & pepper to taste

1 cup unsweetened coconut milk


I like to make this recipe in my Instant Pot, but you can make it in a soup pot on the stove as well. I set the Instant Pot on Sauté.  Add the oil and sauté the onions, garlic, and salt until tender and fragrant. Add broccoli and stir until it starts to get tender.

Add enough chicken bone broth until the broccoli is covered. Set pressure cook to 12 minutes. If cooking on the stovetop, simmer for 30 minutes.

Once the pressure has released, take an immersion blender and blend the soup until it’s smooth. Add coconut milk, salt, and pepper, and blend again until smooth.
