This is another easy recipe for you if you’re on the go. I add chicken and some veggies and wrap it up in lettuce. You can also put it all in a container or a ziplock, store it in a small cooler, and take it with you to have later in the day. We like these when we’re going on a road trip. That way we can stop and eat and not get off plan.
2 large lettuce leaves per person (butter leaf or romaine work really well, just not iceberg)
Half of a large grilled chicken breast sliced
1 TBSP avocado mayonaise
Tomatoes, carrots, or mushrooms (optional)
Spread mayonnaise on lettuce leaves. Add chicken, avocado, and any additional veggies. Wrap it up and enjoy.
