We make this when we just want to have a quick snack handy especially if we’re going to do a week of detoxing. I’ll make it up, put it in individual dishes and it’s there to enjoy throughout the week.
Ingredients
2 cans full-fat coconut milk (14 oz)
2/3 Cup Chia seeds
1/2 cup raisins (I use 1 1/2 TBSP Pure Maple Syrup as a sweetener if someone doesn’t like raisins)
1 cup blueberries, raspberries or strawberries for topping
Directions
Combine all the ingredients except the berries in a blender and blend on low speed until combined. Pour the pudding into bowls, top with berries and serve. If using for a snack later cover without berries for up to 4 days in the fridge.
