After I’ve cooked a turkey breast then I usually make this recipe or turkey wraps. I love to find ways to incorporate turkey into my recipes as my family loves it. I’ll make some suggestions for what you can put in this salad, but you can really include whatever greens and veggies you have around.
6 cups mixed greens, divided onto two dinner plates
8 oz sliced turkey, divided onto the greens
1 carrot, grated
1/2 beet grated
3 hard-boiled eggs, sliced in wedges
1 can artichoke hearts, quartered
4 radishes, sliced
Micro-greens for garnish
Put half of greens on two plates. Lay sliced turkey. Add carrots, beets, artichokes, radishes (or any other veggies). Add sliced eggs. Top with micro-greens.
Top with your favorite dressing. I really like the ranch dressing.
