This is another recipe I got from my son Ryan who loves to find ways to eat cauliflower instead of white potatoes. Since we encourage you to only have white potatoes once a week we try to provide lots of vegetable options. This one is especially good with the Beef Stroganoff on top of it.
Ingredients
1 head organic cauliflower, cut into 1-inch pieces
4 oz organic cream cheese
4 oz pasture-raised butter
Salt and pepper to taste
Directions
Add cauliflower to a pan of cold water and boil until tender (20-30 min). Drain water and then add butter, cream cheese, salt, and pepper. Mash with a potato masher if you like it chunky. If you want it smooth then mix with a mixer or blend with an emulsifier. Serve as a side dish or with Beef Stroganoff or Chicken Alfredo over the top.
