This is hard to call a caesar salad because in level one you don’t add parmesan cheese (and there are no croutons), but because of the dressing that was inspired by Andrea Nakayama, it tastes just like a caesar salad to me.
Ingredients
1/2 head of organic Romaine lettuce, cleaned and chopped in bite-size pieces
1/2 cup olive oil
2 stalks organic celery, chopped
2 TBSP lemon juice
1 TBSP apple cider vinegar
3 TBSP coconut aminos
2 TBSP tahini (you can substitute chickpea miso)
2 dates pitted (optional)
1 tsp kelp powder (optional)
2 cloves garlic
Directions
Place lettuce in a bowl. Add all the remaining ingredients to a blender and blend until smooth. Pour a small amount on the lettuce and toss. Add more if needed. Add pepper to taste.
