Baked Salmon

INGREDIENTS

1 pound side of salmon (wild-caught boneless with skin on)

3 sprigs fresh rosemary

2 small lemons

2 TBSP avocado oil

1/2 tsp sea salt

1/4 tsp ground black pepper

4 cloves garlic, minced

Additional chopped fresh herbs (parsley, dill, basil)

DIRECTIONS

Preheat oven to 400°.

Line baking sheet with foil.

Take 1 TBSP of avocado oil and cover foil.

Lay salmon on top of foil.

Mix remaining avocado oil with juice of lemons, garlic, rosemary, salt, and pepper.

Spread oil mixture over salmon.

Fold foil over salmon so it’s completely enclosed.

Bake for 10-15 min until salmon it translucent all the way through and flakes away. Do not overcook.

Cut into 2 6-oz servings (the rest can be used in salmon tacos).

Serve immediately.
