4- 6 oz halibut fillets (two meals for 2 people)
1 lb asparagus
½ avocado oil (can use olive oil)
6 TBSP minced garlic
Zest of 2 lemons
Juice of 2 lemons
2 tsp dill weed
½ tsp of sea salt
½ tsp of pepper
2 TBSP fresh parsley
Preheat oven to 425°. Line half sheet pan with parchment paper.
Add oil, garlic, zest of lemons, lemon juice, dill, salt, and pepper to glass pie pan. Whisk together.
Place halibut fillets in oil mixture to coat. Place on the middle of the baking sheet.
Trim asparagus spears. Add to pie pan and completely coat with oil mixture. Lay asparagus on both sides of halibut. Sprinkle halibut and asparagus with parsley.
Place in oven for 10-15 min. Check to see that halibut can flake away. Don’t overcook.
