4 6-oz cod fillets (for 2 people for 2 meals)
2 TBSP ghee (melted)
6 TBSP minced garlic
2 TBSP ground coriander seed
½ tsp of sea salt
½ tsp of pepper
Preheat oven to 425°.
Prepare the fish by sprinkling with salt, pepper, and coriander.
Add ghee to saucepan and melt. Add garlic and sauté until fragrant, about 1-2 minutes.
Place cod fillets in skillet and cook 2 min.
Transfer to lower rack of your oven to finish cooking.
Check after 6 min. Remove when flakes away. Do not overcook.
